Chef reveals we’ve been cooking chicken curry wrong due to major blunder

A chef has revealed a common blunder we’re all guilty of when whipping up a curry at home. Fortunately, it’s an easy fix that can elevate your dish to match the zing of your favourite takeaway.

Jeff Baker, the executive development chef at Farmison & Co, has let us in on the secret to transforming our curry-making game – and it’s a quick tweak. According to the Daily Star, Jeff points out that the mistake lies in how we use spices.

He advises against relying on powders, ready mixes, and dried spices if you’re aiming for a richly flavoured curry. Instead, he suggests ‘tempering’ the spices by heating them in oil to amplify their taste before adding them to the curry.

Jeff explains: “To ‘temper’ your spices means to heat them up in oil to bring out their flavours.”. He adds: “It’s a simple, quick step that reaps rewards when it comes to enhancing your dish and intensifying the flavours from the spices. Once you start doing this, you’ll really notice the difference, and it’ll just become part of the curry cooking process.”
